In practice you are awarded a sack for just getting a hand on the QB. I’m thinking in live action some of those a QB could elude or break free. In his career he’s gotten a ton of pressures but not a lot of sacks which suggests to me that happens mores often than he would like.

I dont think so. I've seen more tweets "heavy pressure from Lawson, probably woulda been a sack but Wilson completes it in the flat." You only get a sack in practice if you completely, safely, wrap the QB up. Thats rare in a game. A sack in a game is diving at the QB and taking him down. I also disagree that the 170lb Wilson is going to break free from a 270lb DE in a real game. That's not him. He's not Roethlisberger, he's not Josh Allen, or Cam Newton. --- I hope you are right though and Becton isn't having issues. If its like this in real games there's no way Wilson lasts 17 games.
